I baked apple crisp, cookies and two vegetarian meatloaves. When I have fruit and veggies that need to be used or lost, I tend to get cooking and baking. That's what happened here. But I have some of my favorite foods to eat now.

For supper tonight, I made my husband and myself BBQ sweet meat sandwiches, macaroni and cheese, and coleslaw. It is a fast and easy meal that we both love.

Tonight, I made sweet potato fries. They're so delicious, but they are not fried! I peel and cut them into strips and placed them in a pan with some coconut oil, sea salt, and garlic powder. Then I bake them in the oven at 350 degrees for about 30 minutes. I check them after 15 minutes, stir them around a bit, then put them back in the oven for another 15 minutes.

Earlier this week I made homemade vegetable soup. Not the usual tomato-based kind, but a recipe I made up myself. The secret ingredient is crushed/powdered rosemary. It's hard to find, but when I have it, I make the soup. It has onion, garlic, celery, carrots, potatoes, coconut oil, veggie broth, lima beans, green beans, green peas, kale or cabbage, crushed/powdered rosemary, sea salt, black pepper and turmeric. So delicious!

I love baking, but you know when you find a random recipe online, follow it exactly, and it still somehow turns out wrong? That never happens with Sally’s Baking Addiction! Every single recipe I’ve tried from her website has been amazing. My absolute favorite is the Banana Bread Bundt Cake—it’s insanely moist, full of banana flavor, and that banana icing on top just takes it to another level. If you haven’t tried her recipes yet, I highly recommend them. They always turn out perfect! :D

I'm getting ready to bake some banana bread today! Usually my kids eat all my bananas before they're ripe enough... but today I noticed there are two that are PERFECT. So excited!

I made potato pancakes with instant mashed potato. I usually don’t like instant mash but I wanted potato and with seasoning these were really good. Super simple recipe too!

Potato pancakes, yum! I haven't had any potato pancakes in a long time. They remind me of when I was a little girl and whenever we had leftover mashed potatoes (always made with fresh potatoes!), we would make the pancakes the next day. Besides being so delicious, it was fun to make them.

I baked a doughnut with a strawberry cheesecake. It was so delicious. I also made some noodles with onions and pepper. I fried my noodles to give it a savory taste.

It definitely wasn’t something super impressive, but it was still quite delicious. I made a croissant filled with chocolate, whipped cream, and strawberries. I absolutely recommend anyone who has a sweet tooth to try!
