Dosa Is somewhat like pancakes but thinner. It is a part of South Indian cuisine

When I bought my house I wanted to buy a BBQer, but realized my love of baking wanted to thrive during the summer. I didn't want to heat up my house by turning on the oven... so I bought a Traeger (a smoker).

Yesterday I made carrot cupcakes and used pecan pellets. Love them. Quite happy with the outcome. :)

sounds lovely, I love pancakes. I am a vegetarian so yes pancakes would be great. I am afraid did not bake or cook anything today but ate yoghurt and fruit medley. Carrot cupcakes sound superb I used to make carrot cake with spices.

I haven't yet cooked or baked anything today, but, I would say here in about an hour I must seek refuge in the kitchen. I've concluded that tonight's dinner menu will consist of grilled barbecued chicken with a side of boxed macaroni and cheese, and spinach sounds perfect to finish off the main course. I'm feeling in a bit of an overly southern mood this evening...can't you tell?

I made homemade pepperoni pizza puffs. They were super easy, probably taking no more than 30 mins (prep + cooking). I wanted a healthier version of pizza roles.

I had vegetarian wraps with yoghurt, blueberries and raisin medleys. A small chocolate bar. I don't eat meat.

Homemade salsa on top of garden fresh Romaine, sprinkled with seasoned beef, chopped red onion, black olives and a dollop of guacamole! Mmmm. I absolutely love this time of year when the garden is yielding all of the yummy ingredients for blender salsa , here's my recipe :

2 tomatoes (rough chop)
1 onion (rough chop)
1 jalapeno diced (optional)
Half cup packed fresh Cilantro
2 cloves of garlic
Teaspoon salt (or to taste)
Teaspoon cumin
Juice of a whole lime
Throw all of the above in the blender
Blend to mix all ingredients
Eat!!
Enjoy!

I made stuffed spaghetti squash. After baking the squash in the oven with some seasonings on it I fill it with am almost tomato spaghetti sauce with rice and ground beef as well as other veggies. Than put it back in the oven with cheese on it. It is very easy and so delicious. The filling freezes well and can be used in so many different recipes.
