Sneaking in fruit and veggies

Hey! I'm struggling to include fruit and vegetables in my diet at the moment as the taste is bothering me a bit.
Does anyone have some good recipes to sneak some into food? Like sauces, cookies, baking, etc.?

My dad makes a killer stew that has beef, carrots, tomatos, potatoes, green beans and corn in it. I hate all of these veggies but love it in his stew. I think he found it on AllRecipes.

Maple Carrot Rice: chop a carrot into smallish bits, throw them in to cook with the rice, and then when the rice and carrot pieces are almost done add a swirl of maple syrup. I think a "swirl" might be 1-2 tablespoons.
And almost any squash baked in the oven. Just put brown sugar and maple syrup and cinnamon on it before cooking and it will taste great!

I will often blend carrots, celery, green peppers, and onion and mix it with ground chicken and rice. Bake in the oven 350 x 45”. Really good and kids have no idea!

Hi! I hope you are well. I usually sneak veggies into my pasta sauces. My current favorite is replacing a traditional bechamel sauce with a cauliflower sauce. I steam cauliflower and blend it with plant-based milk and spices until smooth.

I think the trick is to have lots of variety. Try different fruit when they are in season. So depending on where you live, it could be berry fruits in summer (strawberries, raspberries, blueberries), stone fruits in autumn (plums, greengages, cherries, nectarines, peaches, apricots), and citrus in winter (oranges, tangerines, grapefruit, clementines).
Use veg that are local and seasonal to you. Use unfamiliar ones and find recipes for them on the internet. Set yourself a challenge to try one new (unfamiliar) fruit or veg every week.
Don't "sneak" them in, celebrate them!

I love juices made out of them, but I also think that eating them when you get very hungry first might get you into liking them.

I totally get that—it can be tough to work more fruits and veggies into your diet when you're not a fan of the taste. Smoothies are a classic option! You can add spinach or kale to a fruit smoothie, and you won't even taste it. Add a banana, some berries, and a bit of yogurt or almond milk, and you're good to go. Also, pureeing veggies into soups is a great way to hide them. Butternut squash, carrots, and sweet potatoes blend well and add a nice creaminess.

The doctor asked me to have more fruit in my diet. I have made that my breakfast. I started with the cartons of fruit and found applesauce the best. I tried a banana or other single fruit with my morning coffee for a while. Then I read about smoothies, and I have been doing that in the morning, not every day. A balance now that is working is 2-3 smoothies a week, coffee and a fruit a few days a week, and at least one day a week cereal. I have lost some weight and feel better.

I am 71 years old. I posted about fruit ideas in the morning for better health. I also added a Geritol vitamin along with my other many supplements. That increases my iron and gives me better energy.

I experimented with different recipes for smoothies. My favorite is a handful of strawberries, a frozen banana, broken in 2, 1 cup of almond milk, 1 scoop of protein vanilla powder, and a tablespoon of chia seeds. Blend on high boosts till smooth. Put it in the freezer while cleaning up. You can substitute with any kind of milk and any other frozen fruit (peaches, mixed berries), add a frozen avocado chunk to a smoother texture, chia seeds can be substituted with flax seed, and a few cashews. I buy frozen fruit because it makes a nice cool shake and it is cheaper than trying to have fresh fruit, especially avocados that are $$ and go bad quickly.

Sometimes I do bell pepper boats,(red, yellow or orange) and I’ll put either a cream cheese with everything but the bagel seasoning on it or I’ll do a mustard with deli meat and cheese slices and use the peppers instead of bread. So good and super healthy and fun.

Oatmeal. It is already a healthy food independently, but fruit makes it better. I recommend berries or bananas. It is great with honey!
