Here, the Farmer's cheese is a solid block that you can slice, ( Breakstone's ), and the cottage cheese, aka " pot cheese " tastes the same but it's more loose / soupy like Ricotta...

It must be good over Mex. food, similar to " QUESO FRESCO "

Its good over just about anything. They have a goat cheese here thats good, but kind of expensive. I had a cheese making outfit years ago, but I found its cheaper to buy it than it is to make it.

A mixture of beans, chorizo, mushrooms, tomatoes, a little spaghetti sauce, onions, stir fry veg, a jalipino pepper for taste, garlic, oregano, dill pickle juice, salt and pepper cooked it all together and it turned out pretty good. Had it over tortillas with onions and celantro and farmer cheese and salsa verde and lime juice topping. Great stuff.
