When I was young, I used to only eat button mushrooms sliced in a lettuce salad, and on pizza. I liked the earthy taste and the wholesome feeling I had after eating them. Later, I married into an Italian family. My father in law would go into the forest to forage mushrooms; all colors: brown, black, white ,grey. He had a special way to test them to make sure that none were poisonous. I am not sure what his method was , so I won't describe what I know here. However, he would cook them or pickle them. They were delicious, and I never got sick (poisoned). Dried mushrooms are delicious as well. After cooking them, I save the broth to make soups and stir-fries. I also like shitake and oyster mushrooms. You can buy mushroom substrate in boxes, cut open the box, spray them with water daily, and two weeks later, voila! You have enough mushrooms to cook a meal. I admit that the smell of mushrooms is not the best quality they have, but once you have passed that cooking moment they are quite good risotto option.
