Love black pudding ( Boudin Noir Sausage ) my butcher guy makes it from scratch, right there in his shop...

LOVED Scotland's nat.'l dish Haggis...all it is , is another version of granmas " Kishka " aka known as Stuffed Derma, on the N.Y. deli-menus..............main ingredient is oats if i'm not mistaken..........

Tripe in Mexico is used in a soup called " Menudo " or the Hangover Soup...

I enjoyed haggis as well, when I was in Scotland. I ate it mixed with turnips and potatoes and thought it was quite tasty.

Ha just came across this post - it was actually the bladder originally and sausages are of course that shape because they initially used a small intestine as the 'wrapper'

Haggis (well he good stuff) is wrapped/packaged in sausage skin these days and yes cheap Haggis has 'offal' but its no worse than chorizo :)

Its also the centerpiece of a 'Burns Night' when a ~300 year old poem written in its honor is recited before consumption - with whisky of course :lol:

I like chorizo. The secret to eating it is dont look at the ingredients. But its not any worse than baloney or hot dogs. They are at the bottom of the food chain, whatever is left over when they butcher an animal they put in baloney and hot dogs. Lips, ears, private parts, etc. But we still eat them.
