I need your expertise. The book Ive been reading mentions stuffed baked tomatoes. Do you know what they are? they sound good.

Don't let the fact that I mentioned "France " intimidate you, this is not only SCRUMPTIOUS, but so EASY that a child could do it...
All you need is a beautiful ripe tomato ( and you're in the right place for that )...
STUFFED TOMATOES
Combine the following ingredients for the Stuffing:.....
Breadcrumbs, parsley, parmesan cheese, finely minced onions, celery garlic, some olive oil, + I raw egg to bind the whole thing together, and whatever herbs /seasonings you prefer,..... I'm thinking cilantro would be good too..put it in the oven until the top is brown and bubbling...optional: sometimes I add cheese on the top, tomato sauce, or salsa piquante, or salsa verde, etc... btw, great for any leftover veggies you may have, just mince finally and add to the " stuffing mixture ", ( peppers, zucchini, and corn work well )
I love an " uncooked " cold version also...stuff a tomato w/tuna salad, last week I had one w/shrimp salad, DELICIOUS! top it w/your fave salad dressing, place it on a bed of lettuce and Listo, there' a complete meal w/protein and all...
P.S.Don't forget to scoop out the tomato in either version, chop finely and add back to the " mixture "...I've even used leftover rice as part of the stuffing ( along w/the bread crumbs to hold it together )
Enjoy!
Carpe Diem!

last good ones I had were some yellow ones from my daughter's garden, and one from my supermarket that were from Mexico! I forgot the name but they had a weird coloration, ( sorta brown in spots , but not " rotten " brown, more like an " Heirloom ", my fave, have you seen anything of that description there ? )
Next summer I must grow tomatoes!
Carpe Diem!

I like Moscow tomatoes. They are canning tomatoes with a very strong acidic flavor.
