LOVED Scotland's nat.'l dish Haggis...all it is , is another version of granmas " Kishka " aka known as Stuffed Derma, on the N.Y. deli-menus..............main ingredient is oats if i'm not mistaken..........
Tripe in Mexico is used in a soup called " Menudo " or the Hangover Soup...

Haggis (well he good stuff) is wrapped/packaged in sausage skin these days and yes cheap Haggis has 'offal' but its no worse than chorizo

Its also the centerpiece of a 'Burns Night' when a ~300 year old poem written in its honor is recited before consumption - with whisky of course
