I found John Green particularly funny in his co-authored book Let It Snow. I don't remember laughing as hard as I did when I read it. The second time around was even funnier.

Non-fiction wise I always loved reading Erma Bombeck's essays.

Fiction wise, Adams and Pratchett most definitely, but also Robert Asprin - both the Myth series and the Phule series. Later books in those series were co-written with Jody Lynn Nye, who might also have taken them over completely after Asprin's death.

A lot of people find Piers Anthony very funny, though his stuff never really worked for me.

Janet Evanovich. One of my bookworm girlfriends who never lends out books (I get it), lent me her copy of the first book in the Stephanie Plum series. I was hooked. I am always smiling and laughing when I read these books, which can lead to interesting looks and stares when reading in public.

Nick Offerman's book "Paddle Your Own Canoe" was really good and funny. I also really enjoyed Jon Stewart's "Naked Pictures of Famous People" and "The Cat With the Really Big Head" by Roman Dirge (who did Invader Zim and Johnny the Homicidal Maniac)

I'd have to say David Sedaris is probably the funnest person I know. His books are hilarious and I also enjoy his personal readings when he tours. Holidays on Ice is a classic.
